Ne skidati peteljku. </li><li>U dublju a užu šerpicu ili sosijeru sipati belo vino i vodu pa ubaciti krušku. Dodati prstovat šećera, par karanfilića i prstohvat bibera. Kuvati na srednje jakoj vatri 15-tak minuta, ne treba da provri. Kruška treba da ostane kompaktna, ne prekuvana.</li><li>Ohladiti krušku i pažljivo odseći klobuk sa peteljkom, oko 2 cm od vrha. Saki file očistiti od opni. Posoliti i popapriti sa svih strana. Potom svaki uvljati debelo u slatku alevu papriku, da budu sasvim pokriveni. 
Naseći po jednu veliku glavicu luka po osobi na poprečne listiće.
</li><li>Spustiti meso u široku šerpu, na 4 kašike ulja i na umerenoj temperaturi propržiti da dobiju pokoricu od aleve paprike. Kada se počne lepiti za dno, izvaditi meso. U tom momentu filei će izgledati kao zagoreli, što je prirodno i ne treba brinuti. Izvaditi meso i pokriti folijom.</li><li>Isečeni luk ubaciti u šerpu na ulje u kojem je bilo meso. Dodati so, biber i suvi začin i povremeno mešati da ne zagori. Smanjiti vatru. Kad luk postane staklast, sipati dve čaše belog vina u šerpu, dodati 1 - 2 lovorova lista i ostaviti poklopljeno da se krčka. Po potrebi dodavati malo tople vode. Kuvati tako oko 30-40 minuta, pa meso vratiti da se kuva i upija saft.</li><li>Meso kuvati 10 minuta pa sipati u šerpu 2 - 3 dl neutralne pavlake i dobro promešati da se sve sjedini. Posuti seckanim peršunovim listom, probati i po potrebi doterati ukus.</li><li>File poslužiti ucelo, ili nasečen na medaljone debljine 2 cm. Posuti seckanim mladim lukom ili peršunom. Zagrejati vodu u šerpi da provri. Praziluk blanširati u kipućoj vodi 1-2 mimuta. Odmah prebaciti u posudu s hladnom vodom. Ocediti i odložiti.
</li><li>U vrelom tiganju rastopiti 2 kašike maslaca i kašičicu ulja, ubaciti 1 čen sitno seckanog belog luka i po 1/4  zelene, žute i crvene babure seckane na štapiće. Pržiti 2-3 minuta na srednje jakoj vatri. </li><li>Ubaciti čašu milerama i kuvati još 2 minuta. Oljuštiti 30 g „brie“ sira i ubaciti u tiganj. Dodati so, biber i malo rendanog muskatnog oraščića. Kuvati uz stalno mešanje dok se sir sasvim ne rastopi. </li><li>Ubciti praziluk. Posle 1 minut kuvanja ubaciti dosta seckanog peršunovog lista i poslužiti. Peršunov list najlakše je seckati makazama direktno u tiganj.</li><li>Umesto „Brie“ sira odličan je i „Camember“. Tome dodati 1/3 čaše soka od pomorandže i 1 kašiku limunovog soka, 1 svežu pomorandžu naseckanu na kriške i ananas kockice iz konzerve. Kuvati pet minuta. </li><li>	Četiri ispečene palačinke presaviti na četvrtine (trouglove) i položiti u tiganj. Kuvati ih u postojećem sosu tri minuta pa dodati dve kašike narendane kore pomorandže. 

</li><li>	Doliti u tiganj dve kašike likera po izboru (poželjno je da se ukusi slažu) ili ruma. Zapaliti i flambirati (plamen će se ugasiti kad ispari alkohol). Odstraniti koštice. Naseckati dve na kriške ili kocke, a jednu samo prepoloviti.

Svaki komad začiniti sa malo soli, suvog začina i vrlo malo aleve paprike (prstohvat). Iseći prsa na komade, ili na veće kocke ili deblje trake, po želji. </li><li>	Zagrejati tiganj sa svega par kapi ulja. Piletinu propržiti uz stalno mešanje i okretanje da se ne zalepi za dno tiganja. Pržiti nekoliko minuta, dok meso ne dobije zlatno smeđu boju, kao sa roštilja. Piletinu izvaditi iz tiganja i odložiti. </li><li>	U tiganj dosuti kašičicu ulja i spustiti komad plesnjivog sira po izboru, (Gorgonzola, Rocfor, Danish Blue...), veličine po izboru. Izlomiti ga u tiganju kako bi se brže topio. Dodati u tiganj lako topljivi sir (camember ili brie) veličine otprilike kao komad plesnjivog, ili već gotovo pakovanje u manjem koturu.  Odmah dodati i 2 dl neutralne pavlake za kuvanje, i sve mešati dok se ne stvori ujednačena struktura. Potom ubaciti kesicu rendanog parmezana i još malo sve promešati. 

</li><li>	Probati ukus, dodati malo bibera i u preliv od sira ubaciti komade piletine. Ostaviti da kuva 5-7 minuta (zavisno od veličine komada). Ukoliko je previše zgusnuto, dodati još malo pavlake.Posuti sitno seckanim vlasecm.

Uvaljati u brašno i kratko propržiti u tiganju uz povremeno okretanje, na 2 kašike ulja, da porumeni sa svih strana. 

</li><li>	Izvaditi meso i staviti u ekspres lonac. U lonac dodati: 1 glavicu luka seckanu na krupnije komade, 4 nagnječena čena belog luka, ½  kg oljuštenog isečenog paradajza, 3 šargarepe sečene na kolutove, 1 čašu suvih šljiva prethodno natopljenih u mlakoj vodi, so, biber, suvi začin po ukusu, 2 kašičice šečera, 2 kašičice soka od limuna, prstohvat cimeta i 2 kašičice slatke aleve paprike.

</li><li>	Zatvoriti lonac i kuvati oko 20 minuta. Kad pritisak popusti, izvaditi iz lonca i ukrasiti svežim listićima nane ili ruzmarina. Ukoliko se kuva u običnom loncu, pokriti ga duplom alu folijom i poklopcem i kuvati otprilike jedan sat.

Rezance od povrća ubaciti po redosledu tvdoće: papriku pržiti minut, pa ubaciti praziluk i krastavac pa pržiti minut. Onda ubaciti šargarepu i tikvice i sve pržiti još 3 minuta.
